Tomato & Basil Salad

Salads are always a good starter to a meal, or as an accompaniment and by ringing the changes it will be good enough for a light summer lunch.

Yield: 8 - 12 servings
Ingredients:
4 to 6 round Italian tomatoes
1 punnet of cherry/baby tomatoes
Basil leaves
Salt and black pepper
8 to 12 slices mozzarella cheese
DRESSING
25 ml white Balsamic vinegar
100 ml olive oil
10 ml sugar
Directions:
1. Place the mozzarella slices on flat platter
2. Cut the round Italian tomatoes into slices or wedges and place onto the cheese.
3. Leave cherry tomatoes whole or half and add to platter.
4. Tear basil leaves and sprinkle onto tomatoes
5. Season with salt and pepper
6. Prepare dressing and shake well.
7. Pour the dressing over the tomatoes and set aside to marinate for a few minutes
8. Serve in individual bowls
